Roasted Lamb Chops


Here I present to you my tasty roasted lamb chops. They are roasted on a low fire, scrumptious and full of flavour! Another plus – they don’t require too much preparation and time in the kitchen, perfect for busy people like myself!

INGREDIENTS

  • Lamb chops (approx 2.5kg)
  • All purpose seasoning
  • Curry powder
  • Ground cumin
  • Soy Sauce
  • Thyme
  • Garlic (3 cloves)
  • Ginger (5cm in diameter)
  • Onion
  • Tomato (1-2)
  • Potatoes (Rooster, Nadine, Saxon – any potatoes that are good for mashing)
  • Cooking oil (sunflower/vegetable)
  • Sea Salt
  • Bay Leaf
  • Butter
  • Chives
  • Vegetables (optional)

HOW TO

Roasted Lamb

Wash lamb with lemon/vinegar, dry off and add the seasoning. (All purpose, curry powder, ground cumin, thyme, soy sauce, onion, crushed garlic and onion) Leave to marinade for at least 4 hours in the fridge, for a fuller flavour leave overnight. Take the lamb out the fridge at least an hour before cooking (when meat is cooked straight from the fridge it has a tendency to stiffen quicker than meat left at room temperature) remove all the onions – leave the onions in the seasoning bowl as we will use them for the gravy a little later.

Pre-heat oven to 170C/ gas mark 3 (150C/ gas mark 2 for fan assisted ovens). Grab your baking tray and cover the base with foil, add the seasoned lamb chops and cover with foil. Put in oven and check every now and again to make sure they are not sticking to the foil (give them a little shuffle) Leave to cook for an hour, remove any liquid and put to one side as we will use for gravy. For the last 30 mins remove the foil to let the lamb brown.

Gravy

Use a small pot, heat up the oil on a medium fire add the chopped onions from earlier, add a little seasoning also a bay leaf. Once onions have cooked add 1-2 sliced tomatoes. Tear off a piece of the lamb, preferably with a piece that has some bone on it and add to gravy. After gravy has cooked for a little while (3-4 mins) add the liquid that came from the lamb chops. Once gravy is boiling, turn fire down and simmer with lid on. Cook for approx 20 mins

Mashed Potato

Remove skin from potato and cut into small pieces (we cut the potato into small pieces as it reduces cooking time) add water to a pot sprinkle some sea salt and butter. Cook until potatoes are soft (approx 20/30 mins). Use a sieve and drain off potatoes.
